Display half loaf on a disposable plate, in a resealable plastic
bag with the entry tag attached to the outside of the bag at the non-resealable
end. Prizes: 1st

Cranberry
Oatmeal Squares 1 tbsp. cornstarch ½ c. cold water 2 c. fresh cranberries ¼ c. raisins 1 c. white sugar 1 tsp. vanilla ½ c. butter 1 c. oatmeal ¾ c. flour ¼ c. brown sugar ¼
c. coconut
Dissolve cornstarch in cold water. Add cranberries, raisins, sugar and vanilla; cook until thick. Combine remaining ingredients in a separate bowl and spread half of mixture in a baking pan. Spread the cranberry mixture next and top with the remaining dry ingredient mixture. Bake at 350 degrees for 30 minutes.

Apple Sauce Spice Bars (3, displayed as per general class rules for
Domestic Science)
½
c. butter, softened ¾
c. Splenda granular sweetener 3
eggs 2
c. all-purpose flour 2
tsp. cinnamon ½
tsp. baking soda ½
tsp. salt ½
tsp. ground nutmeg 1
– ½ c. unsweetened apple sauce 1
c. raisins 1
c. chopped walnuts
In
a large bowl, beat butter with Splenda until light.
Beat in eggs one at a time. Sift
together dry ingredients. Stir
into butter mixture alternately with apple sauce, making two additions
each. Stir in raisins and
walnuts. Scrape into greased
13 x 9 inch metal cake pan. Bake
in 350 degrees F (180 degrees C) oven for about 40 minutes, or until cake
tester inserted in centre comes out clean.
Cool. Cut into bars.
